Seviche
Serves 6-8
Ingredients :
1 lb Cod Fillet
1 lb Scallops, cut in half if large
3 limes squeezed for all juice and rind grated
1 small shallot, finely chopped
1 small jalapeno, seeded and chopped
1 TBSP parsley, chopped
1 TBSP cilantro, chopped
1 small green pepper, diced
2 green onions, chopped
3 TBPS olive oil
fresh ground pepper to taste
Directions :
Remove any skin from cod and cut into a small dice. In a large glass bowl, put in cod and scallops and cover in lime juice. Add more if needed. Add lime rind, shallots and jalapeno. Mix and cover bowl and refrigerate about 4 hours. Add all other ingredient and refrigerate overnight or up to 24 hours. To Serve, place on lettuce leaf or in large wide rim glass with pita bread wedges or crackers.
